Rosemary Simple Syrup

Herbaceous quick and easy simple syrup that's perfect for cocktails

Ingredients

  • 6-8 sprigs of rosemary
  • 1 cup water
  • 1 cup white sugar

Instructions

  • Add the rosemary, sugar, and water to a small saucepan. Bring to a boil over a medium-high heat.
  • Once the sugar dissolves, turn off the heat and let the mixture sit for 15-20 minutes.
  • Once the syrup is as strong as you'd like it, strain the mixture through a fine-mesh sieve into a jar or storage container.
  • Refrigerate for up to one month.

Notes

So many ways to use this syrup, but my favorite is in a simple gin and tonic. 
Rosemary Gin & Tonic: In a cocktail glass filled with ice, add 2 oz. gin and 1 oz. rosemary simple syrup. Fill with tonic, gently stir, and garnish with a sprig of rosemary.
