Slice your ginger (unpeeled) into ¼ inch rounds. You'll need about a cup of sliced ginger.
Add the ginger, water, and sugar to a small saucepan. Bring to a boil over a medium-high heat.
Reduce to heat to medium-low and simmer for 20-30 minutes.
Once the syrup reaches your desired strength, strain the mixture through a fine-mesh sieve to a jar or other storage container.
Refrigerate up to one month.
