If you love herby cocktails or drinks, you’ve got to try this rosemary simple syrup! It’s incredibly easy to make and packs so much flavor. The first time I ever made this syrup was for my first annual Christmas party in Seattle. While the syrup was absolutely delicious, the cranberry rosemary gin drink I made wasn’t exactly easy to transform from a solo cocktail to a batch punch. It ended up having the strength of a martini, but went down so smooth. It made for a very fun, but toasty evening.
Anyway, if you like your drinks on the herby side and want something other than mint, look to rosemary.
Ways to use rosemary simple syrup: My favorite way to use this syrup is in a rosemary gin and tonic (recipe below in the notes). Rosemary brings out all the herbaceous qualities of gin, so it’s the perfect pair. If you’re more of a mocktail person, I’d make the same recipe, but substitute a zero-proof spirit like Seedlip Garden 108. You can also try this in a cranberry rosemary lemonade – just add a slash of cranberry juice and a splash of syrup to a glass of lemonade.
Rosemary Simple Syrup
Ingredients
- 6-8 sprigs of rosemary
- 1 cup water
- 1 cup white sugar
Instructions
- Add the rosemary, sugar, and water to a small saucepan. Bring to a boil over a medium-high heat.
- Once the sugar dissolves, turn off the heat and let the mixture sit for 15-20 minutes.
- Once the syrup is as strong as you'd like it, strain the mixture through a fine-mesh sieve into a jar or storage container.
- Refrigerate for up to one month.
