Lavender simple syrup is my favorite way to mix up my morning coffee routine. I was a bit hesitant at first to try this flavor combo, concerned that the herby notes of the lavender would clash with bitter coffee, but I couldn’t be more wrong. A lavender latte is my drink of choice every summer when I see it pop up on the corner coffee shop menu.
But, don’t stop at only coffee drinks when it comes to lavender. There’s so many ways to use this simple syrup. Give it a twist and add some vanilla to the mix for a delicious vanilla lavender London Fog. You can also throw in a sprig or two of rosemary to kick up the herby notes for a yummy rosemary lavender lemonade or cocktail.
If you don’t have a bouquet of lavender leftover from your summer farmer’s market haul, you can look for lavender at most spice or tea shops. When I was in the States, the Spice House was my favorite place to track down difficult to find herbs and spices.

Lavender Simple Syrup
Ingredients
- 2-3 tablespoons dried lavender
- 1 cup water
- 1 cup white sugar
Instructions
- Add the lavender, water, and sugar to a small saucepan. Bring to a boil over a medium-high heat.
- Once the sugar completely dissolves, turn off the burner and let the mixture sit for 15-20 minutes.
- Strain through a fine-mesh sieve into a jar or storage container once the syrup is as strong as you'd like it.
- Refrigerate in a closed container for up to 1 month.
